Tena Yistiligne!

This is the Ethiopian everyday greeting.   Ethiopia is famous for its hospitality and that tradition is still cherished today. Sharing food from common plate, signifying the bone of loyalty and friendship.  In traditional settings, diners prepare for a meal by first washing their hands.  Remember when you were small how much fun it was to eat with your fingers?   Talk about finger licking good food!!!

What is “injera, we't & Berbere”?

Injera: is made from a cereal grain that is known as Teff. It is the spongy flat bread with a sourdough like taste that    accompanies most meals. Nutritionally, Teff is referred as a miracle food partly because it contains two to three times the iron of wheat or barley!

We't: is a general name for all Ethiopian sauces which are rich in exotic spice blends and usually cooked slowly with lots of onion: onion has a regal place in all Ethiopian cooking.

Berbere: is the basic ingredient in most Ethiopian cooking, which contain red Chile pepper and over twelve exotic spices. (Rue seed, cardamom, cloves, Ajawan seed, basil etc.)
